   Marzipan

                                               First you need a cookie sheet with a 1/2 inch lip edge

make pastry to cover the bottom and the sides of the

                                                  cookie sheet .  This can be done in 2 pieces if you 

                                                  cannot roll 1 large piece.

                                                   Pats no fail pie crust  even if you cannot make pie 

                                                   crust you can make this  

                                                   Pie Crust

                                                    1/4 cup margarine

                                                    1/2 pound shortening

                                                    Cream together

                                                     1/2 tsp salt

                                                      Add just a bit of sugar

                                                      3 cups flour

                                                      1/2 cup water

                                                      add the salt and sugar then the flour 1 cup at a time

                                                      this makes a sticky mixture so you can either add

                                                      more flour or more water to make it right

                                                      Roll out from the bowl and knead in a floured 

                                                      surface about 10 times to make a ball and cut in 

                                                      half 

                                                      Now I use the whole ball  to make the crust for the 

                                                    cookie sheet . We like a thicker crust  it tastes better

                                                     Next step

                                                     Put a thin layer of strawberry jam over the pie crust

                                                     This pie crust is raw so 

                                                     This is tricky   I use a spatula and spread gently

                                                     You will need about 3/4 of a large jar  16 oz. size

                                                      Next Step

                                                      Cake mix

                                                       2/3 cup  of white sugar

                                                       1/2 cup of butter do not substitute

                                                       Cream till fluffy

                                                       add 2 egg whites and beat till fluffy

                                                       mix to butter mixture

                                                       Then add 2/3 cup rice flour and 1/4 tsp salt

                                                       Add just a few drops of almond flavoring

                                                       Tip

                                                       You will need 2 batches of the batter to  cover the

                                                        pastry 

                                                        Again spread the batter gently onto the jam and

                                                        crust

                                                        Bake in oven 400 degrees for 10 minutes and 

                                                        then at 350 degrees for 20 minutes  ---the crust 

                                                        should be golden and flaky

                                                        Let this cool several hours

                                                        Icing

                                                       1 bag icing sugar

                                                       1/4 cup butter   (do not substitute)

                                                        6 drops almond flavoring

                                                        mix just enough milk to make icing spread able

                                                        Spread on cool  cake with a spatula  again gently

                                                        as the rice flour cake is flaky and you do not 

                                                        want it in the icing.

                                                        IMPORTANT  NOTE

                                                        If freezing do not ice as it will go soggy and runny

                                                        Ice only after it thaws from the freezer

                                                        This is a very old recipe I hope you enjoy it .
