           CHERRY CHEESECAKE

                             This is not low fat......  

                             Ingredients

                             Crumb crust

                             3 1/2 cups graham wafer crumbs

                             1/ 3 cup butter (room temperature)

                             1/4 tsp cinnamon

                             1/4 tsp nutmeg

                              1/4 cup sugar

                               Blend all well and press into a 9 or 10 inch spring pan, remember  

                               to press the crumbs up the sides  (so the bottom and sides are

                               covered.

                                Now take the shell and chill in the fridge 1/2 day

                                Cheese filling

                                 4 eggs    (beat well)

                                 1 cup of sugar

                                 1 --1 pound container of sour cream  (room temperature)

                                  2 tablespoons flour

                                  1/4 tsp salt

                                   2 tablespoons of melted butter

                                   1 tin of cherry pie filling  or make your own

                                  1 large package of cream cheese * should be 1/2 pound of

                                  butter size cut lengthwise*  (room temperature)

                                   Tip

                                  You will find if you take the cheese and sour cream out in the

                                  morning they are easier to work with in the afternoon.

                                  1 tsp vanilla

                                  Use the rind from 1 lemon

                                  About 1 tsp lemon juice.

                                  Mix all the ingredients with a mixer and pour into the shell

                                  Now bake at 3:50 degrees for about 1 to 1 1/2 hours 

                                   When the cake is done turn the oven off  and open the oven

                                    door.   Now leave the cake inside the oven to cool do not

                                    remove it

                                    When it is cool enough to handle then remove it from the oven

                                    Now you will want to chill   ( I usually chill overnight in the

                                    fridge)

                                    Open the tin of cherries and pour what you need onto the top

                                    ( I usually use the whole tin)  sometimes 2 tins)
